Vegetarian Chili

One of our favorite ways to pack some healthy foods into a delicious meal is through soup, stew, or in this case, chili. A vegetarian chili is a great option when trying to incorporate more vegetables into your diet without sacrificing any flavor. In addition to this being a meal that is perfect for a chilly Pittsburgh spring evening, it is also easy to make and perfect for meal prep. You can easily modify your classic chili recipe by subbing out ground beef for extra beans or even adding lentils to give it the feel of ground beef. Pan-seared Salmon with Roasted Veggies

In addition to plant-based meals, we recommend incorporating fish into your diet at least once a week, if not more. A great way to easily prepare fish is by cooking it on the stovetop with delicious and fresh ingredients. One of our favorite flavor profiles is a lemon-garlic salmon that is packed with healthy fats. We also love this recipe from Allrecipes, but recommend subbing out the butter for olive oil to incorporate more healthy fats and better accommodate the MIND diet recommendations. For a side dish, we recommend roasting your favorite seasonal vegetables tossed with olive oil, garlic, salt, and pepper.

Turkey Burgers with Sweet Potato Fries

A burger is perfect for those days when you are craving a classic and hearty meal. Substituting ground turkey for ground beef is a great way to make this classic healthier. In addition to using a leaner choice of meat, we also highly recommend using a whole grain bun to help you reach your daily recommended serving of fiber. Burgers are also the perfect vessel to add vegetables to without feeling like you are compromising on eating something delicious.
