Kick up the flavor this spring while committing to healthy living

There’s nothing like the change of seasons to whet our appetites for new and exciting seasonal recipes to try. While we love the rich and hearty meals of winter, we’re ready to change things up with crisp and fresh spring meals loaded with herby goodness and citrusy flavors. Spring is one of the best times of year for fruits and veggies, and while we all love a simple salad or a handful of strawberries from time to time, it’s more fun to get creative.

To inspire the communities surrounding our memory care homes in Montgomery County, we at Woodland Creek Memory Care Community have compiled a list of some of our favorite spring dishes to try. Check out the tasty options below!

Asparagus with Anchovy Butter

Truly one of the best vegetable sources of fiber and vitamins, asparagus is one of our go-to spring veggies. We especially love that it can be helpful in aiding digestion and lowering your blood pressure! Rich in omega-3s, anchovies are a true sea treasure with fantastic health benefits. Pair the two together, and you get an excellent side for any meal. Packed with flavor from the briny fish, a squeeze of lemon, the nuttiness of parmesan shavings, and of course, the freshness of the asparagus, we have no doubt this dish will become an easy go-to side for years to come!

Spinach and Strawberry Salad

Nothing says spring like a fresh salad! Loaded with nutrients and bright, sweet flavor, strawberries are easily one of spring’s most beloved fruits. This yummy recipe pairs sweet and tangy strawberries with hearty calcium-rich spinach and creamy, crumbly feta cheese. Light and perfect for an afternoon lunch or as a starter for a protein based entree, this salad offers up a twist on a more traditional garden salad. Be generous with the balsamic poppy seed dressing, as it is out-of-this-world delicious!

Scallops and Lemon Peas

Bright and tangy lemon is a classic pairing with sea scallops, but add in some sweet spring peas, and the entire dish takes on a whole new level of flavor. Fish, including scallops, are often counted on as an important source of omega-3s, so finding new ways to incorporate fish into a healthy diet is important. Between the salty and tender lumps of scallop, the zest of the lemon, and the fresh green taste of the sweet peas, this dish offers taste and health benefits galore. Just try to save some of this recipe as leftovers–we dare you!

Green Smoothie

Some days, you just need a simple and easily portable meal to take on the go. We’re huge fans of getting in our green veggies with smoothies–the perfect meal to sip while running around town. Whether you’re on a walk with friends or driving to a doctor’s appointment, or even in your backyard while watching the birds return from their winter away, this easy smoothie is the perfect convenient way to sneak in some vitamins and minerals. This nutrient-packed green smoothie offers a ton of options, while still sticking to its main flavor profile: ginger, greens, citrus, and mint. Bananas add creaminess (we suggest buying bananas in bulk and freezing them for an ice-cream like texture in your smoothies), and greens like spinach or swiss chard, which are not too overpowering.
