Our favorite foods that are delicious and good for you!

With chilly, rainy weather still in the forecast, it is easy to crave, warm, hearty meals to keep you satisfied. While reaching for things like fried chicken, mashed potatoes, and hot chocolate are tempting, we are here to remind you that there are also healthy and delicious comfort foods perfect for those rainy New York spring days. We prioritize delicious and healthy meals here at Juniper Glen Memory Care and Transitional Assisted Living, which is why we compiled a list of our favorite healthy comfort foods.

Baked Chicken with Cauliflower Mashed Potatoes

At the top of our list of the best comforting recipes is baked chicken with cauliflower mashed “potatoes”. We love adding baked chicken to our weekly menus because it is an easy and healthy way to add great flavor and protein to your meal! There are tons of great recipes out there for baked chicken, but we love this one from Food Network. It is simple, yet delicious. For the side, we love using cauliflower mash as a way to incorporate more veggies into the meal without taking away the satisfying taste that is perfect for a rainy day. To pair with the perfect baked chicken, we recommend the garlic mashed cauliflower in this recipe from Allrecipes.

White Chicken Chili with Extra Veggies

Chili is an absolute rainy-weather favorite, and for good reason. We love varying from the classic chili recipe and instead preparing a delicious white chicken chili. The wonderful thing about something like chili is that you can make a big batch and then eat it all week. Chicken chili is a great option because you can use lean white meat chicken breasts as well as add tons of vegetables into the pot to add additional nutrients. This is a great base recipe for chicken chili from the Food Network. In addition to their ingredient list, we love adding in extra bell peppers, and using chicken bone broth for more added nutrients and flavor!

Butternut Squash Soup

Butternut squash soup is the perfect light lunch or dinner, especially when it is raining outside. With warming spices and delicious creaminess, it is easy to find yourself coming back for more each time you make it. A great way to make this even more nutritious is by blending in other vegetables. We love the addition of cooked carrots, pumpkin, or any of your favorite veggies that would pair well with the sweetness of butternut squash. Cauliflower Crust Pizza

Our final meal that is a must-try in our opinion is a cauliflower crust pizza. You can find these crusts frozen at the grocery store ready to go for all of your favorite toppings. These are a great way to enjoy all of the deliciousness of pizza, while still eating tons of nutrients. Did we mention they are tasty? In addition to the cauliflower crust, we love topping our pizzas with extra healthy toppings like diced bell pepper, diced tomato, mushrooms, sliced red onion, zucchini or yellow squash, or perhaps once it is out of the oven, some peppery arugula.
