Enjoy delicious seasonal flavors with meals that will fuel your body and mind

Summer brings with it more than just sunshine and warm weather, it also brings delicious seasonal produce and the inspiration for fresh and delicious meals. All of our expert chefs here at Woodland Creek, an all-inclusive Alzheimer’s and Memory Care Facility near Philadelphia, focus on bringing your loved ones the most delicious and nutritious meals possible. While our community takes care of our residents’ day to day nutrition, we know that there is no better time to try new and refreshing recipes than the warmer months. That’s why we have created a menu of meals to try if you or your loved one are feeling adventurous!

Eggs and Greens Bowl

Well + Good has a plethora of delicious recipes and meal ideas that focus on the MIND diet (Mediterranean-DASH Intervention for Neurodegenerative Delay). One that we found that is a must-try for the warmer weather is the Eggs and Greens Bowl. Leafy Greens topped with your choice of over easy (or boiled) eggs and another form of vegetable (they chose cauliflower). Add avocado and drizzle with olive oil for additional healthy fats to make this the perfect power-packed breakfast to keep you going all day.

Tip: Experimenting with your personal favorite spices is a great way to customize any recipe to your own liking!

Baked Salmon with Greens and Brown Rice

Fish is a great staple for those trying to eat healthy and cover all of their nutrition needs. One of our favorite fish to prepare is salmon. We recommend baking it in the oven topped with olive oil, minced garlic, salt, black pepper, and lemon slices. Serve it with a side salad made with dense leafy greens (like kale or spinach) and an olive oil based dressing. To add in some healthy carbohydrates, serve with another side of brown rice. The whole grains and omega-3 fatty acids found in the fish help to ensure that this is a meal that will satisfy your cravings and keep you full until your next meal. This meal was inspired by Creme De La Crumb’s baked salmon recipe.

Black Eyed Peas Salad

Another recipe found on Well + Good is their Black Eyed Pea Salad. This legume-based meal provides not only great protein, but tons of nutrients and delicious flavor! It is also anti-inflammatory, which can help reduce many health and gut related issues. The author of the article on Well + Good says “the black eyed peas, veggies, and spices are all full of antioxidants and help prevent chronic inflammation. As with many recipes on this list, it also calls for garlic and olive oil—two cognitive health superstars.” If black eyed peas are not your favorite legume, we recommend swapping out for chickpeas, black beans, pinto beans, or any other legume you love!

These three healthy dishes are a great source of healthy fiber, fats, proteins, and brain nourishing food.
