The MIND diet guidelines recommend incorporating healthy foods like green vegetables, whole grains, berries, tree nuts, fish, and olive oil. It also recommends limiting some other foods, including red meat, butter, cheese, sweets, and fried food.

The MIND diet’s recommendations are incorporated in our daily menus at Stone Valley. And while we stick to these guidelines most of the time, our residents may find foods or ingredients that don’t always align with the MIND diet. That’s because we believe it’s okay to indulge thoughtfully and sparingly, and that enjoying some not-so-healthy favorites occasionally can improve quality of life.

These healthy ingredients are used in delicious, comforting meals that are available in our restaurant-style dining room 24/7.   • Eggplant Parmesan: Layers of eggplant with tomato sauce and cheese, served with Garlic Bread Minestrone Soup.
  • Catch of the Day: Served with Brown Rice & Toasted Orzo Pilaf and Fiesta Vegetables.
  • Chicken Piccata: Served with butter noodles or sautéed asparagus and Waldorf salad.
  • While we have breakfast specials, we also have the following to choose from:
      – Eggs made any way, breakfast potato du jour, assorted fruit, assorted juices, choice of breakfast meat, and hot & cold cereals.
